When you walk towards the south of the city from Onze-Lieve-Vrouweplein square through the narrow alleys, you will easily find the Bisschopsmolen or Bishop’s Mill. The scent of fresh bread and the rattle of the oldest working water mill will show you the way. You can see the mill while standing on the bridge over the Jeker river. Inside, you can see the bakers at work and enjoy the freshly baked bread and vlaai (pie) the eating room.

History of the Bisschopsmolen
The mill was built in the 7th century and has had different functions through the years. In the 11th century, it was let out to the Principality of Liège, which is also when the mill was given its current name. In the late Middle Ages, the mill was run by the Brewers’ Guild and beer brewers in the city were required to have their malt ground by the Bisschopsmolen.
In 2004 the mill and associated building were fully renovated. The baker prepares traditional bread and pies. Visitors can see the mill at work and, of course, enjoy bread and the delicacy of Limburgse vlaai at the bakery.
Activities at the Bisschopsmolen
The mill and bakery are freely accessible. If you are coming with a group, taking the guided tour is a good idea. It takes about 1.5 hours and is suitable for groups of 10 or more.
Editor’s tip: The shop also sells wonderful products to take home, for instance the spelt bread mix with recipe. This way, you can enjoy the excellent bread at home, too!
