Ask any Dutchman about their favourite pie and the answer is likely to be ‘appeltaart’. Most people have a favourite recipe, and often these are passed on for several generations, each adding their own touch. The one thing they all have in common, however, is the warm scent of cinnamon and freshly whipped cream to go with it.
Winkel 43 in Amsterdam is often seen as the best place to enjoy Dutch apple pie and it is therefore no wonder they serve hundreds of pieces per day. Located near the lively Noordermarkt, Winkel43 is always packed with locals and shoppers in need of a little rest after browsing the market. Their apple pie has moist dough with crispy edges and combines perfectly with the big sweet and sour chunks of apple. Served warm with a big dollop of whipped cream, this pie is so lushuous that it is a meal in itself.
According to Amsterdam newspaper Het Parool, the apple pie from well-known bakery Kuyt is the best in town. Most people in Amsterdam seem to agree as the bakery needs over five hundred kilos of golden rennet apples a week to let everyone enjoy a slice of their famous pie. Somewhat different from the classic Dutch version, their pie is more of an apple schnitt. It has a thick crust, sweet apple filling and a delicious layer of powdered sugar with almond shavings on top.
In Den Haag, Arnhem and Rotterdam you can find another famous version of the Dutch classic at Dudok. Here, you can enjoy a pie that is served cold with a golden crumbly top layer, a slightly fragile crust and a generous amount of juicy, tender apple pieces in between. Served with freshly whipped cream, of course. It is highly unlikely that you are not completely stuffed after finishing a piece.
Three-star chef Jonnie Boer of restaurant De Librije in Zwolle takes the classic Dutch apple pie to a whole new level. His mother’s recipe has been transformed into a brilliant and impressive dish: a deconstructed version of apple pie presented in a custom-made wooden box. Ingredients such as dark chocolate, star anise and a mascarpone cinnamon stick surprise you with every bite.
